New to veganism and not sure what to do for lunch? The common panic is to mourn the loss of supermarket sandwiches and resign yourself to a life of soup.
Soup isn’t food – it’s just a pretentious drink.
What I take to work for lunch totally fills me up, tastes delicious and is so good for me I feel like I could drink a gallon of Oatly Vanilla Custard and not feel it. I mean, I would, obviously, but that’s not the point.
You will need:
- 1 cup brown rice
- 1 cup spinach
- 1 spring onion
- 1 carrot
- 2 tbsp hummus
- 1/2 avocado
- 1 tbsp pumpkin seeds
- 1 tbsp sunflower seeds
- 1 tbsp sesame seeds
- 1 tbsp chia seeds
